Buttermilk Pancakes

This recipe is from Becky.

Pancakes
1 1/4 c. Flour
1 egg
1 1/4 c. buttermilk
1/4 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1/4 c. oil
1 pinch of salt.

Mix all together. Heat a lightly buttered griddle to medium heat. Spoon batter onto griddle and brown both sides until golden brown.

Buttermilk Syrup (the BEST syrup I have ever had)
1 cube butter
3/4 c. sugar
1/2 c. buttermilk
1 tsp. soda
1 tsp. vanilla

Melt butter, sugar and buttermilk over medium heat. When it starts to boil, remove from heat and add soda and vanilla. Stir. It will foam up. Serve hot. Can be refrigerated for up to 2 weeks.

Garlic Lemon Tilapia


4 Tilapia fillets
3 T. Lemon Juice
1 T. butter, melted
(I triple the butter and lemon juice since we usually make like 8 fillets. And with fish, especially if you are not a fish lover, the more lemon and butter, the better)
1 clove of garlic, chopped
1 tsp. dried parsley
Pepper to season
Tinfoil

Pre-heat oven to 375
Rinse Tilapia and pat dry
Set Tilapia in a square piece of foil, and fold up the sides, to pre-vent the juices from spilling out.
Pour on some of the melted butter, lemon juice, sprinkle with crushed garlic, pepper, and parsley flakes.

The original recipe said for you to put them in a shallow baking dish and just pour everything over and cook in the dish. I prefer the foil, it bakes everything better together and gives more flavor. Fold up foil, and set in oven.

Cook for 25-30 minutes until fish flakes easily with a fork. Yum!
